# Our Story

From a garden shed in East London to a thriving specialty roastery

## How It All Started

Roastair was founded in 2020 with a simple mission: to bring specialty-grade coffee to everyday drinkers. What started as weekend roasting sessions in a garden shed has grown into a thriving roastery in the heart of Shoreditch.

We were frustrated by the gap between the incredible coffees we tasted at specialty cafes and the stale, bland options available for home brewing. We knew there had to be a better way, so we set out to bridge that gap.

Today, we roast over 2 tonnes of coffee per week and ship to thousands of customers across the UK. But our mission remains the same: exceptional coffee, ethically sourced, freshly roasted, and delivered to your door.

## Meet the Team

### Alex Chen

*Founder & Head Roaster*

Former barista champion with 15 years in specialty coffee. Alex profiles every origin individually on our Probat UG-22, obsessing over every variable to bring out the best in each bean.

### Maria Santos

*Green Coffee Buyer*

Maria travels to origin 4 times a year, cupping hundreds of samples and building long-term relationships with farmers. She ensures every bean meets our quality and ethical standards.

### James Wright

*Head of Production*

James ensures every bag that leaves our roastery meets our exacting standards. He manages quality control, packing, and logistics to get your coffee to you as fresh as possible.

## Our Values

#### Quality Without Compromise

We source only the top 2% of beans and roast every batch to order. If it does not meet our standards, it does not ship.

#### Direct Farmer Relationships

We work directly with farmers, paying well above market rates and signing multi-year agreements for financial stability.
