Sourcing

Maria visits our partner farms in Colombia, Ethiopia, Brazil, Guatemala, and Kenya twice a year. We cup hundreds of samples to select only the top 2% of beans. Every lot is scored using the Specialty Coffee Association protocol, and we only buy coffees scoring 84 points or above.

We pay 40-60% above commodity market rates and sign multi-year purchase agreements. This is not charity; it is an investment in quality. Farmers who have financial security can invest in better processing equipment, sustainable practices, and higher-quality varietals.

Roasting

Every batch is roasted on our Probat UG-22 drum roaster in Shoreditch. Alex profiles each origin individually, adjusting charge temperature, airflow, drum speed, and development time to bring out the unique characteristics of each bean.

Light roasts are pulled just after first crack to preserve bright acidity and delicate florals. Medium roasts develop further for sweetness and balance. We never roast past second crack because we believe the bean should speak for itself, not taste of carbon.

Quality Control

Every roast is cupped by our team before it leaves the roastery. We check for consistency, flavour clarity, sweetness, acidity balance, and body. We compare against our reference profiles for each origin to ensure batch-to-batch consistency.

If a batch does not meet our standards, it does not ship. Simple as that. We would rather waste coffee than compromise on quality. Fortunately, with Alex at the controls, rejected batches are extremely rare.

Packing and Shipping

Coffee is packed in our compostable bags with a one-way degassing valve to preserve freshness while allowing CO2 to escape. Each bag is sealed within hours of roasting and labelled with the roast date so you always know exactly how fresh your coffee is.

Orders are dispatched within 24 hours of roasting via Royal Mail. Standard delivery takes 2-3 working days, and express next-day delivery is available for orders placed before 12pm. All our shipping boxes are made from 100% recycled cardboard.
